Detailed Job Description

Fuller’s are offering a fantastic opportunity for those that want to learn whilst earning and develop their culinary skills to the highest standard.

In partnership with Brockenhurst College, we will provide full training in all aspects of food preparation and cooking whilst giving you an insight into some of the liveliest kitchens across Hampshire.

Working in a Fuller’s Kitchen is exciting and challenging but with a full team to support and mentor you, you will develop a rich understanding of all dishes, as well as, a passion for the fresh and delicious produce that we use.

Alongside an in-depth understanding of the practical cooking skills, 1 day a week will be spent at the Brockenhurst College, which will help further your theoretical knowledge.

This will leave you fully prepared to tackle your assignments required to complete the course.

Food Preparation

Supporting the running of a section preparation of meat, fish, poultry, vegetables and sauces as part of the kitchen brigade.

Preparing fresh ingredients ready for service to Fuller’s Chefs’ Guild Standards

Requirements and Prospects

Qualifications required

  • A-C GCSE or equivalent English, Maths desired but not essential
  • Food Safety and Health and Safety awareness preferred
  • A previous catering qualification or experience is desired but not essential-please state in your application if attained

Skills required

  • Resilience, team working and good communication skills are essential
  • An interest in good food and ambition
  • Able to use kitchen equipment including knives and prepare basic dishes
  • Able to work well under pressure
  • Able to communicate well with colleagues
  • Able to produce consistent quality food
  • Able to learn quickly on the job and complete training

Personal Qualities

  • Happy working to the direction of the Head Chef / Sous chef and be able to follow instructions
  • You’ll have an eye for detail, be passionate about cooking, and be obsessed with quality
  • You’ll be reliable and trustworthy – always turning up for shifts, and your lessons
  • Enthusiasm for cooking
  • Amiable and able to communicate well with the rest of the team
  • Punctual and willing to learn to develop but confident in own cooking skills

Future prospects

Further development through our Fuller’s Chefs’ Guild Progression onto year 2 of the programme which upon completion may lead to an offer of permanent employment and opportunity for long-term career progression and competitive salaries. All academics must be completed.

Additional Information

Training provided

The successful candidate will undertake an Intermediate Apprenticeship including both on and off the job training.

Training will be carried out at Brockenhurst College and on the employer premises.

An Apprenticeship in Commis Chef comprises of the following:

  • RQF Diploma Level 2 –Highfield EPA
  • Functional Skills in English Level 1,and Maths Level 1
  • Employment Rights and Responsibilities
  • Award in the Hospitality Industry 2 year progression through Fuller’s Chefs’ Guild

Training will be part of the contracted hours agreed that makes up the working week.

This programme includes one day a week at Brockenhurst College where you will be timetabled for practical classes, theory classes and, if required, Maths and English.

You will receive training in classical technique with a qualified chef lecturer and there will be expert-led masterclasses throughout the year - past masterclasses have included butchery, fish and pasta.

This employer pays above the National Apprenticeship Minimum Weekly Wage: Age 16 - 20 £240;Age 21 – 24 £282;Age 25+ £300
