Claytons and The Glasshouse is a well-established Barnstaple restaurant and bar with an excellent reputation for serving high quality food. We are looking for two trainee commis chefs to join the kitchen team on an apprentice basis. You will be provided with excellent training for the Head Chef and Sous Chefs, to develop your skills in a wide range of areas to Rosette standard. Employment will be on a full-time basis, at 30 hours per week at a rate considerably above apprenticeship minimum wage, with time made available for theory based learning through Petroc. Initial responsibilities will include: food preparation, basic cooking and an introduction to commercial preparation theory, with significant opportunities to advance as your skills develop. The end goal is for the apprentice to join the team on a full-time employment basis as a fully-trained Commis Chef. Minimum Entry requirements: GCSE C-D in Maths and English
You’ll need to have a lot of stamina, be able to learn on your feet and be passionate about food because cooking in a high pressure kitchen is hard work. You’ll also need to be versatile, because it is important that you gain experience in all sections of the kitchen - fish, pastry, butchery and so on - before you consider specialising. Key responsibilities: Maintaining high standards of hygiene Preparing the ingredients for a more senior chef Measuring dish ingredients and portion sizes accurately Dealing with deliveries and stock rotation Supporting chefs ina specific work section. Washing, peeling and preparing food items Using a variety of kitchen equipment such as mixers, Special knives and cutters Washing kitchen appliances, work surface
We are looking for someone who loves cooking. Who is able to listen and follow the instruction. There will be a space for your own creativity though.Remember, this is one of the lowest ranking jobs in the kitchen, but if you’re committed, a white hot career awaits.
The aim is for the apprentice to complete their training both with Claytons and Petroc and move to a full-time position within the kitchen team.
As a trainee you’re on the first rung of the ladder to becoming a great chef. In our kitchens you’ll do food preparation work and basic cooking under the supervision of a chef de partie or section chef, rotating through sections such as sauce, vegetables, fish and butchery roughly every six months. This is your big chance to learn all there is to know about your trade, but the standard and style of cooking you do will be determined by your commitment and Our head chef has been trained by well known very charismatic great personalities. Has got years of experience in art of cooking. You will have a chance to gain a strong fundament in this trade.
Apprenticeship National Minimum Wage (ANMW): The National Minimum Wage for Apprentices is £3.50 per hour. This is the legal minimum pay per hour applying to 16-18 year old apprentices and those aged 19 and over in the first year of their apprenticeship. For apprentices 19 or over who have completed their first year and are continuing their apprenticeship, the National Minimum wage appropriate to their age applies.
