Description

Preparing a standard menu and a fortified menu for up to forty five residents

Dealing with specific medical requirements eg Diabetes

Meeting with residents to discuss dietary needs

Controlling and ordering stock and inspecting it on delivery

Gutting and preparing animals and fish for cooking

Scraping and washing large quantities of vegetables and salads

Cooking and presenting food creatively

Monitoring production to maintain quality and consistent portion sizes

Working under pressure to make sure food is served on time

Keeping to hygiene, health and safety and licensing rules

4 GCSE’s at Grades A-D, or equivalent. Must attain a Level 1 on the initial assessment at College.

NVQ Level 2 Professional Cookery

Technical Certificate Level 2 in Professional Cookery

Functional Skills Level 1 in English and Maths
