Description
Area of responsibility/tasks:
- Cleaning –Contribute to presenting the kitchen to high standards so that staff can work in a safe and comfortable environment.
- To carry out designated cleaning duties in line with the cleaning schedules within the food preparation area or as requested.
- Washing up manually and by machine.
- To assist in ensuring that all storage areas are kept clean and tidy at all times.
- Ensure that all food deliveries are checked, recorded and stored in accordance with the St Aubyn food safety policy.
- Record and check all temperatures of fridges and freezers as required by the St Aubyn Estate food safety policy.
- Clearing tables in the dining room and outside area if required.
- Assisting with food preparation during busy periods.
- To assist with food preparation before service.
- If required, deliver food to our customers.
Customer service:
- Provide a great service to all our external and internal customers.
- Be smart, polite and helpful at all times.
- Be aware of all the activities offered on the Mount and be able to answer broader questions (or know who to ask).
Health and safety:
- Follow safe working practices.
- Be aware of emergency and first aid procedures.

Essential:
- GCSE C/4 in Maths and English or equivalent.

The programme involves developing effective knowledge, behaviours and skills in four main areas – culinary, people, business and food safety with specific topics including:
- Preparing, cooking and finishing basic dishes including fish and shellfish, poultry, meat, game, stocks and sauces, bread and dough, rice and pasta, soups, vegetables and pulses, egg dishes, hot and cold desserts, cakes and biscuits.
- Health, safety and security of the working environment including food safety and hygiene practices.
- Food waste management and minimisation.
- Professional behaviours – timekeeping, attendance, following company standards, reliability, communication.
- Importance of working within budgets.
- Understanding the supply chain and how to work with suppliers.
- Risks in a work environment and how to manage them.
- Taste – basic flavour profile, seasoning, herbs and spices.
- Correct techniques including common knives, tools and equipment.

- Meeting targets and effectively controlling resources.

On successful completion of the apprenticeship there is a possibility of a job role.
Working Days: 5 out of 7 for summer, then 1 day at college and flexible working hours in winter. Shifts are between 7am and 11pm, with weekend working. You will also receive a share of tips.
