Looking for day shifts in an Award-winning cafe/restaurant? We operate 5 days a week with Straight shifts with very few evenings. The Waymarker seeks an enthusiastic and energetic individual to develop within our small owner-lead kitchen team. Do you take pride in not only how your food looks but where it comes from? The Waymarker will match your age to your wage and even reward you when you build up your skills and knowledge throughout the apprenticeship. The Waymarker is willing to take development beyond into supervisory role for the right candidate.

THE WAYMARKER IS a family run business on our family farmland established in 2009. We take pride in using local produce and making homemade or freshly prepared lunches. We have won accolades from Cornwall tourism awards, Choose Cornish Awards, South West tourism awards and the observer food monthly awards. Our selection of suppliers to The Waymarker concentrates on those who are local and environment aware. This choice reduces the food miles from source to plate with our team being ready to answer any queries on products. We have the advantage of beef and lamb being used from the fields of my father’s farm which surround these premises, so tasty products couldn’t get any closer. This “choose local” policy in turn benefits local economy by sustaining job opportunities and can return to reward businesses by improving the living wage of the population. We also believe in supporting our community through social events and fundraisers to improve or maintain facilities or services important to a balanced neighbourhood.

Detailed Job Description

  • Ordering supplies & planning menus
  • Monitoring kitchen budget and checking in orders with price lists
  • Recording and enforcing food hygiene & health and safety regulations
  • Working directly with Head Chef for mis en place
  • Helping with all sections of the kitchen, so a great opportunity to learn
  • Possibility to help run the pass during service
  • To start, predominantly running garnish section and helping plating. Guidance and training provided
  • We require someone with a hard working attitude and a an ability to adapt to the fast-paced environment during main service
  • Someone passionate about food and looking for a career in catering

Requirements and Prospects

Qualifications required


  • GCSE grade C/4 plus in Maths and English is requested, with an ICT qualification considered an advantage, however all applicants will be considered on merit subject to initial assessment against the challenging academic requirements of the framework

On successful completion of the apprenticeship there is a possibility of a job role.

Training provided

The primary objective of the Commis Chef is to learn and understand how to carry out the key functions in every section of the kitchen. Therefore having the opportunity to experience, consider and value each section with a view to choosing an area where they feel most inspired.The programme involves developing effective knowledge, behaviours and skills in four main areas – culinary, people, business and food safety with specific topics including:

  • Preparing, cooking and finishing basic dishes including fish and shellfish, poultry, meat, game, stocks and sauces, bread and dough, rice and pasta, soups, vegetables and pulses, egg dishes, hot and cold desserts, cakes and biscuits
  • Health, safety and security of the working environment including food safety and hygiene practices
  • Food waste management and minimisation
  • Professional behaviours – timekeeping, attendance, following company standards, reliability, communication
  • Importance of working within budgets
  • Understanding the supply chain and how to work with suppliers
  • Risks in a work environment and how to manage them
  • Taste – basic flavour profile, seasoning, herbs and spices
  • Correct techniques including common knives, tools and equipment
  • Key allergens
  • Working as part of a team
  • Meeting targets and effectively controlling resources

You will be active most of your shift. Working weekends is essential. Our location is rural with nearest bus running to village 20 minute walk away (no Sunday bus service).
