Description
We are looking for an enthusiastic person who wants to learn how to cook amazing food and gain a qualification in the growing hospitality industry! You will enrol at Exeter College where you will go 1 day a week and work in our kitchen for 4 days learning from myself and my sous chef Carlie. We have been running kitchens for 10 years and gained accolades and awards wherever we have been, we are super passionate and will teach you everything we know. I have enrolled and taught many apprentices over the years in various pubs and we have recently successfully enrolled and taught 1 student from Exeter college who passed with flying colours in 2020.
You will be starting on the larder section, under the supervision of Carlie the sous chef. You will be helping to prep starters, veg, salad, sauces, desserts, and any other food prep jobs that need doing for service. You will always keep your section/area clean and tidy. You will report any issues or low stock to the senior chef on duty. You will assist the senior chef in any of their jobs when needed or asked. You will help the kitchen assistant in their duties if they need help. You will help with service by plating starters, getting mains plates ready with salads, sauces and garnishes, also plating desserts and keeping the pass clean and tidy after sending each table.

Basic knowledge of food and ingredients, home cooking skills, working in a team, good time management
Maths and English GCSE, grade C/4 (or equivalent).
If you do not have these qualifications our team will support you to gain these skills alongside your apprenticeship.
You will work towards achieving the following:
- Certification of Commis Chef Apprenticeship standard
- Level 1 Functional Skills in English and Maths (where applicable)
Fast learner, adaptable, good listener, organised, clean and tidy, good under pressure, sense of humour
Goose and Gander Kitchen are getting busier and busier as the months go by, we are going to be extending service hours and days imminently and looking at another site for the future. This will give the right candidate the opportunity to take 2nd chef in the kitchen as quickly as possible and to take lead chef as and when we are all comfortable in doing so. There will be constant outdoor food events happening her at the Lord Nelson Pub which means the candidate will get a chance to have a play with BBQ food, and slow cooking on our custom-made spit roast. They will also get to showcase their culinary ideas on our ever-changing specials every week. Also get involved with special event dining nights where we up the ante and go full fine dining mode so again, more chances to learn or show off! We also do parties, weddings, wakes and any other large group events, this will increase your skills on banquet catering and learn the importance of large number menu planning, forward prep and ordering.
